Emerging Technologies for Prolonging Fresh-Cut Fruits’ Quality and Safety during Storage

Fresh-cut fruits have been in great demand by consumers owing to the convenience of buying them shopping centers as ready-to-eat products, and various advantages, such fact that they are healthy fresh products. However, their shelf lives brief due physiological changes maturation. Therefore, this review includes information from physicochemical, microbiological, nutritional, sensory points view on deterioration mechanisms fresh-cut fruits. In addition, updated is presented different emerging technologies, active packaging (edible films, coatings, modified atmospheres), natural preservatives (antioxidants antimicrobials), physical treatments (high hydrostatic pressure, UV-C radiation, ozone). The benefits disadvantages each these technologies ease applications discussed. Having alternatives preserve fruit essential both for consumer merchant, since could then obtain a high-quality product maintaining all its properties without causing any damage, merchant would receive economic having more time sell product.
